California Avocado Salsa with Jicama Chips

  • 2 avocados, peeled and cut in ½ inch cubes
  • 3 cups cooked small white beans
  • 1 fennel bulb, trimmed and thinly sliced in 1' pieces
  • 1 medium fennel bulb
  • 1 cup halved grape tomatoes
  • ¼ cup minced red onion
  • ¼ cup minced parsley
  • ¼ cup sliced kalamata olives
  • ¼ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped basil or mint
  • salt and pepper
  • 1 jicama, peeled and sliced
  1. Peel and cut avocados and place in a small bowl aside with a sprinkle of lemon juice to keep them from browning.
  2. Place the beans, fennel, tomatoes, onion, herb, and olives in a medium bowl.
  3. In a small bowl add the oil, and whisk in the lemon juice, mix in the herb.
  4. Season with salt and pepper.
  5. Add the dressing to the bean mixture and mix gently .
  6. Add the avocado and serve with slices of jicama.
