Blueberry Clafoutis
Choose your fruit and add it to this custard base for a lovely dessert, that can be made with common pantry ingredients.

  • 4 cups fresh blueberries, stemmed and washed
  • 3 eggs
  • ⅓ cup sugar
  • ½ cup flour
  • ⅔ cup milk or cream
  • 1 vanilla bean, scraped
  • zest of ½ lemon
  • pinch of salt
  • powdered sugar for topping
  1. Heat the oven to 350.
  2. Place the berries in a single layer in the bottom of a 9-10 inch pie dish.
  3. In a medium bowl, lightly whisk the eggs.
  4. Add the sugar, flour, milk, vanilla seeds, zest and salt.
  5. Pour the batter over the berries.
  6. Bake in the oven for about 1 hour, or until the top is brown and the juices are bubbling.
  7. Cool and dust with powdered sugar.
  8. Serve warm.
