Mint Palmiers
Want a little crunch with your sorbet, add this recipe alongside your dessert. Add any herb and change it up with the flavor of sorbet you have chosen. These can also be savory and served with a warm soup or salad.

  • 1 sheet puff pastry, defrosted
  • fresh mint, finely chopped (1/2 cup, divided)
  • ½-1 teaspoon sugar
  1. Preheat oven to 400 degrees.
  2. Chop the fresh mint and set aside.
  3. On a floured surface or parchment paper, roll the dough into a 10- inch square.
  4. Spread the ¼ cup of mint and sugar mixture over the dough.
  5. Fold the left and right side together to meet in the middle.
  6. Roll the left side over the right side.
  7. At this point of the dough is warm, place it back in the refrigerator until cold.
  8. Slice the pastry into ½ -inch slices. Dip slices on one side with the ¼ cup mint.
  9. Place herb cut side up onto the lined sheet pan.
  10. Bake until golden about 10-15 minutes. Flip and cook for 5 more minutes.
  11. Move carefully to a wire rack to cool.
  12. Can be served hot or cold.
