Fresh Tomato Egg Scramble - “Kagiana”

  • 1 tomato, seeded and chopped
  • 1 tablespoon butter
  • 2 eggs, beaten
  • ½ cup feta cheese
  • salt and pepper to taste
  1. Melt butter in frying pan.
  2. Add chopped tomato, and cook on medium-low until pink. Add a pinch of pepper and salt.
  3. Add the beaten eggs and cook on low until set.
  4. Add salt and pepper.
  5. Remove from pan and sprinkle with crumbled feta.
