When shopping for beets, you can purchase beets with the greens or without.
I like to buy the greens with the beets and cook the greens later, or add them to the dish.

This is a simple technique to cook any root vegetable, but this is using beets.

Just simply wash the greens and boil them like you would do with spinach, and dress with olive oil and lemon/or vinegar.

Or you can saute them in a little olive oil, and garlic and serve them warm.

For this recipe you will need the following ingredients:

1 sheet pan
foil and parchment
1 small bowl


Wash and cut off beet. Keep greens aside for later.


Cover beets with parchment paper then wrap in foil, or just place them as is on a sheet pan.

Bake in a 350 degree oven for 45-1 hour.

Check with a sharp knife if beets are ready


Let beets  cool and slightly and unwrap. Peel by rubbing the beet with a paper towel while warm.


Place in a bowl and add olive oil, garlic and vinegar.

Add salt and pepper.

Cut into quarters or slice in 1/4 ” thick slices.
