Ingredients

  • 1/2 pound dried yellow split peas
  • 1/2 onion, peeled, cut in half
  • 2 tablespoons extra virgin olive oil, divided
  • 1 bay leaf
  • 1 teaspoon salt, divided
  • 1/2 lemon, juiced

Instructions

  1. Rinse the peas with cold water.

Place the peas and onion in a medium saucepan, cover with water and bring to a boil. Reduce heat to a simmer.

Add 1 teaspoon of olive oil and 1 teaspoon of salt to the beans and cook uncovered for 1 1/2 hours or until tender.

Once cooked, remove the onion, bay leaf and drain. Place in a food processor or blender. Blend until smooth. Season with salt and pepper. Add olive oil and lemon juice to thin out peas if needed.

Place in a bowl and top with olive oil and lemon juice.

Additional toppings may include capers, green onions, olives, seeds, red onions or chopped radishes.
