Baked Yams with Pineapple Maple Glaze

Ingredients

  • 4 large yams
  • 1 can 8ozs. crushed pineapple
  • 1/2 cup brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon lemon juice
  • 1 teaspoon dried mustard
  • 2 teaspoons butter

Instructions

  1. Place washed yams in a pot and bring to a boil.
  2. Reduce to medium and cook for 20 minutes until soft when inserted with a knife. (may vary check often)
  3. Pour crushed pineapple over yams.
  4. Mix together sugar, maple syrup, mustard, and lemon juice in a small bowl.
  5. Pour sugar mixture over yams.
  6. Dot with butter .
  7. Bake yams in a 350 degree oven for 35-40 minutes until bubbly.
  8. Can be made the day before, refrigerated and re-warmed.
