Papaya and Black Bean Salsa

Ingredients

  • 6 1/2 ozs. cooked black beans
  • 1 papaya, cut into small dice
  • 5 1/4 oz. small diced red pepper
  • 3 1/4 oz. small-diced red onion
  • 2 jalapenos, seeded and minced
  • 3 tablespoons chopped cilantro
  • 2 teaspoons dried oregano
  • 2 tablespoons minced ginger
  • 1/4 cup olive oil
  • 1/4 cup lime juice and zest for topping
  • 1 teaspoons ground black pepper
  • 2 teaspoons salt

Instructions

  1. Combine all the ingredients and adjust seasoning. Serve immediately or cover and refrigerate until needed.

  2. Serve with chips, sliced bread, or crackers.
