Greek Custard with Cinnamon "Krema"

Make this simple custard dusted with cinnamon for a quick breakfast or dessert. Serve it warm or cold. Can be served with fresh berries or a cup of coffee/tea.

Ingredients

  • 3 cups milk
  • 1/2 cup sugar
  • 4 eggs
  • 1 tablespoon vanilla
  • pinch of salt
  • cinnamon for topping

Instructions

  1. Preheat oven to 325 degrees.
  2. Place a square 8x8 glass pan in a larger pan with hot water reaching half way up the sides.
  3. Warm the milk, 1/2 cup sugar, salt and vanilla. Set aside.
  4. Beat the eggs in a medium bowl, and slowly add in a 1/2 cup of warm milk into the eggs, whisking until well blended.
  5. Add the remaining milk whisking slowly.
  6. Place a sieve over the glass pan and pour through into the pan.
  7. Place in the oven in the water-bath and bake for 45-55 minutes, or until knife inserted comes out clean.
  8. Remove from oven and sprinkle with cinnamon.
  9. Cool, then refrigerate for several hours before serving.
