This recipe was created for the Fruit Cobbler activity. I just love pears, and @melissasproduce just sent me several fresh Asian pears.  With the addition of vegan butter, whole wheat and AP  flour, cinnamon and #Oatly milk you have a lovely chunky cobbler. 

I enjoy serving ice cream with my cobblers, it’s that hot-cold sensation that makes it a complete dish. I used vegan vanilla ice cream with a drizzle of homemade raspberry sauce.  This recipe will make it for sure into my family recipe box! #californiagreekgirl #healthyliving #healthylifestyle

Large in size, they are extremely sweet and juicy. They make an impressive presentation, with a few additional ingredients. Adding ruby gold potatoes also from @melissasproduce gives the salad hardiness for  a substantial meal. Look for them at your local grocery store.

Have you ever added a segment of fruit to the top of your muffin? Once baked, it’s gives you just a burst of citrus juice in your mouth. I’ve often added berries, figs, and grapes to enhance my pastries. Don’t pass up these juicy and healthy mandarins, they are now in season!
    I’m bringing back the Baked Alaska! Yes, I am wi I’m bringing back the Baked Alaska! Yes, I am with a Vegan Tropical Delight. This is Task #120 from my @rouxbeplants program. What makes this Vegan? There are no eggs or dairy in the recipe. I was so pleasantly surprised how simply this dessert came together.

When developing this recipe, I baked a white Vegan cake with toasted coconut flakes, and once baked cut it into rounds to fit the ramekin. For more tropical flavor I added a slice of fresh pineapple. And if that’s not enough, added a layer of chopped macadamia nuts and topped it with a coconut Vegan ice cream by @coconutbliss.  And into the freezer it went. 

Yes, the topping is a Vegan meringue made with #aquafaba a bean liquid. Once whipped,  I covered the frozen ice cream with the meringue and used a torch to give it color. Lastly, a touch of lime zest. 

Best of all, my neighbors were walking by and we enjoyed the dessert together!
